This baby is runnnnnin’ out of room! As of this week, I’m feeling like I’m ready to have this child. I’ve gotten quite a few stretch marks across my sides and thighs and they’re just starting right on the center of my belly so I’m hoping that it doesn’t stretch much more because my skin is just not happy about it haha
In honor of it being Thanksgiving week, I thought I’d share a recipe of one of my favorite side dishes… Pan Fried Green Beans with Bacon. SO so so yum. I do a lot of my cooking where I guess amounts according to taste (learned that from my mama) so bare with me.
2 lbs. fresh green beans, ends snapped and washed
6 slices of bacon
half an onion (sweet, if you can get one) sliced
Cook bacon over medium-high heat in a large skillet and reserve drippings
place bacon on paper towel
cook beans and onion in bacon skillet in the drippings (add a little olive oil, if needed)
stir often for about 10 minutes
salt and pepper
taste a bean to see if it’s tender-crisp (I like mine very crisp but cook until you’re happy with it)
put in serving bowl and sprinkle with chopped bacon pieces; mix
Eat and Enjoy
*sliced granny smith apple
Also, I attached a link to a recipe for Paula Deen’s Corn Casserole. It’s another one of my favorites that I make any holiday that I get the chance!
In the spirit of Thanksgiving I’d just love to take a moment to list a few of the things I’m so thankful for:
The opportunity to be pregnant and getting to meet this sweet baby soon
My friends and clients
Living in America
My dog Cooper
The opportunities I have to travel this beautiful world
I hope you each get to enjoy this holiday with loved ones and get to take a moment to reflect on the things we are each blessed with in our lives!
